Pineapple Fried Rice
Ingredients:
- 1 cup cooked rice (preferably day-old for best texture)
- 1/2 fresh pineapple, peeled and diced
- 2 medium tomatoes, diced
- 1 bell pepper, diced
- 1/4 cup cashews, toasted
- 2 spring onions (scallions), chopped (separate the white and green parts)
- 200g firm tofu, cubed and pressed (if necessary)
- 2 large eggs, lightly beaten
- 2 tablespoons soy sauce (adjust to taste)
- 1 tablespoon Golden Mountain seasoning sauce
- 1 tablespoon Thai stir-fry sauce
- 2 tablespoons vegetable oil (for frying)
- Optional: pinch of sugar or splash of lime juice for added balance
Instructions:
Prepare the Tofu and Cashews:
- Press tofu to remove excess moisture, then cut into cubes. Heat a pan over medium heat with a small amount of oil. Fry the tofu cubes until golden and crispy on all sides. Remove from the pan and set aside.
- In the same pan, add a touch more oil and toast the cashews until lightly browned and fragrant. Remove from the pan and set aside.
Cook the Eggs:
- In a large wok or skillet, heat 1 tablespoon of oil over medium-high heat. Add the beaten eggs and cook, stirring gently, until the eggs are just set. Remove the eggs from the pan and set aside.
Sauté the Vegetables:
- In the same wok, add another tablespoon of oil. Sauté the white parts of the spring onions and diced bell pepper for 2-3 minutes, until slightly softened.
Add Rice and Sauces:
- Add the cooked rice to the wok, breaking up any clumps. Stir in the soy sauce, Golden Mountain seasoning sauce, and Thai stir-fry sauce. Mix well, ensuring the rice is evenly coated with the sauces.
Combine the Ingredients:
- Add the diced pineapple, fried cashews, cooked tofu, tomatoes, and the green parts of the spring onions. Gently stir to combine all the ingredients. Simmer for 2-3 minutes, allowing the flavors to meld. (For extra balance, you can add a pinch of sugar or a splash of lime juice at this stage.)
Finish and Serve:
- Return the scrambled eggs to the pan, stirring to incorporate. Adjust seasoning if needed.
- Serve the fried rice hot, garnished with extra spring onion greens, chopped cilantro, crispy shallots, or chili flakes for extra flavor and texture.
Additional Tips:
- Rice Texture: Use day-old rice or refrigerate freshly cooked rice for a few hours to prevent it from becoming too soft and sticky when frying.
- Vegetarian/Vegan Tip: Ensure that the sauces you are using are vegan-friendly, especially the Golden Mountain seasoning sauce.
