Ingredients:
- 1 cup rolled oats (for better texture)
- 1/4 cup ground flaxseeds (for easier digestion)
- 1/2 cup natural peanut butter (smooth or crunchy, depending on your preference)
- 1/4 cup honey (or maple syrup for a vegan option)
- 1 tsp ground cinnamon
- 1/4 tsp vanilla extract (for added flavor)
- 2 tbsp chia seeds (for an extra nutritional boost)
- 2-3 tbsp dark chocolate chips (optional, for a rich taste)
Directions:
Blend the Dry Ingredients:
- In a food processor, pulse the rolled oats and flaxseeds together until the oats are slightly ground but still have some texture. This helps improve the consistency of the laddus and makes them easier to roll.
Add Wet Ingredients:
- To the food processor, add the peanut butter, honey (or maple syrup), ground cinnamon, and vanilla extract. Pulse again until everything is well combined into a thick, sticky dough. The consistency should be slightly firm but sticky enough to hold the shape when rolled.
Add Extra Ingredients:
- If you're using chia seeds and/or chocolate chips, fold them into the dough by hand or pulse them lightly in the food processor to distribute evenly without breaking them down too much.
Roll the Laddus:
- Once the mixture is ready, take small portions and roll them into bite-sized balls, about the size of a golf ball. If the dough feels too sticky to handle, lightly grease your hands with coconut oil or water to help shape the laddus.
Chill (Optional but Recommended):
- Place the rolled laddus on a tray or parchment paper and refrigerate them for at least 30 minutes to firm up. This step helps the laddus hold their shape better and enhances the flavors.
Store:
- Store the laddus in an airtight container.
Tips for Extra Flavor & Nutrition:
- Nut butters: You can experiment with almond butter or cashew butter instead of peanut butter for a different taste.
- Spices: Try adding a pinch of ground ginger or nutmeg for a cozy, spiced flavor profile.
- Sweeteners: If you prefer a less sweet treat, reduce the honey or maple syrup to 3 tbsp.
- Add-ins: Chopped nuts (almonds, walnuts) or dried fruits (raisins, cranberries) can be added for extra texture.
